Chocolate applesauce cake — Ninja Speedi

Ingredients

  • 1/2 cup of butter or shortening. Melted butter speeds the process.
  • 1 cup of sugar
  • 1 egg
  • 1 cup of applesauce
  • 1.5 cups of all-purpose flour
  • 1/3 cup cocoa powder (sugarless, not instant cocoa)
  • 1 tbsp instant coffee crystals/powder (okay, I usually skip this)
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp allspice
  • 1 tsp baking soda

Method

  1. Cream butter/shortening with sugar until light and fluffy.
  2. Add egg. Beat well. Stir in applesauce.
  3. Mix flour, cocoa, spices and baking soda. Sift three times. (I don't have a big sifter, so I just used my regular wire sieve; that worked great.)
  4. Stir the dry mixture into the wet ingredients.
  5. Coat the bottom of two 6'' x 3.75” x 2” aluminum foil loaf pans with spray cooking oil or butter. Transfer batter to the loaf pans.
  6. Pour two cups of water in Speedi pot. Put tins onto tray in lower position. Set steam/bake for 18 minutes at 315°F. With the steaming this may take as long as 45 minutes. Don't panic.
  7. Check for doneness with a toothpick. Remove promptly from Speedi.

Slow cook chicken & stuffing (no sour cream) — Ninja Speedi

This recipe I took straight from a YouTube crockpot recipe. Didn't need any changes whatsoever.  Worked perfect the first time. (source)

Ingredients

  • 2 chicken breasts
  • 2 cans of condensed cream of chicken soup
  • 1 can of chicken broth
  • 2 six-ounce boxes of dry stuffing mix or one 10.5-ounce bag.

Method

  1. Remove tray from pot. You won't need it for this recipe.
  2. Place chicken breasts in bottom of pot and salt and pepper to taste.
  3. Pour the stuffing mix over the chicken. Even it out so all the chicken is covered.
  4. In a separate bowl combine the cream of chicken soup and chicken broth and whisk to a smooth consistency.
  5. Pour the soup/broth mix over the stuffing so that all the stuffing is covered.
  6. Set the Speedi to slow cook on low.
  7. After 4, 5, and 5.5 hours, check to see if the dressing is too dry. If so, put some chicken broth in a glass measuring cup, heat it in the microwave just shy of boiling, and pour the broth in the pot. (If you use room temperature broth it will extend the cooking time.)
  8. After six hours confirm that the chicken shreds roughly and easily with two forks. If the chicken is not tender, give it another hour or two on low.

Comments

This worked fine the first time. Only needed six hours. It's not a particularly interesting dish, but it's flavorful enough and awfully easy to prepare. Next time around I'll try four chicken breasts.

Store-bought bacon-wrapped jalapeño poppers — Ninja Speedi

This afternoon I bought some bacon-wrapped jalapeño poppers at Fry's Groceries.  (That's a Kroger-branded store; it might be named differently in your area.)

I put the tray in the low position, poppers on the tray, and set the Speedi to Air Fry at 350°F for 14 minutes.  Came out pretty well perfect.

One caveat:  make sure place them cream-cheese side up.  These were so thoroughly wrapped with bacon that I got one of them wrong.  The cheese melted through the tray.  It wasn't pretty.

Italian sausage with broccoli alfredo — Ninja Speedi

2023-11-07:  I basically tried to use the Chicken Broccoli Alfredo recipe from the Speedi recipe book that came with the Speedi.  The sausages turned black outside although, praise Heaven, they didn't have a burnt taste.  Next time instead of using the whole fifteen minutes on the sausage, I think I should put it on Speedi meals for 5 minutes, then add the sausage in and set it for 10 more minutes.

Banana cake — Ninja Speedi

Ingredients

  • 8 tbsp of butter
  • 2/3 of a cup of sugar
  • 2 eggs
  • 1 ½ cups of all-purpose flour
  • 2 tbs of milk
  • 3 ¼ teaspoons of baking powder
  • 2 mashed bananas

Method

  1. In a bowl add butter and sugar and cream together until light and fluffy.
  2. Add one egg and stir, then add the other egg and stir.
  3. Add half the flour and fold it in.
  4. Add the rest of the flour, the milk and baking powder and mashed bananas and stir.
  5. Place in a loaf tin.  I actually used two aluminum foil loaf tins.
  6. Put 3 cups of water in the pot place tray on lowest level add the loaf tin. The water will probably slightly come through the tray. Don’t freak out. It’ll be alright.
  7. Set to steam bake at 345°F for 18 minutes.
  8. Allow to cool and serve.

2023-11-06:  First experiment.  Taste-wise it was perfect with banana-y flavor without being too sweet.  The bottom was a bit soggier than I liked.  Next time I think I'll try 330° for 23 minutes, thus extending the cooking time by 5 minutes. Or better yet 345°F for 15 and then sear/saute for 3 minutes.


2023-11-20:  Third experiment.  This is better.  Still might need to decrease the steam and bake time by one minute and increase the sear/saute  time by one minute.

Banana bread — Ninja Speedi version

 Ingredients

    • 1 ½  cups of all-purpose flour
    • 2 tbs of milk
    • 3 ¼ teaspoons of baking powder
    • 2 mashed bananas

Method

  1.  In a bowl add butter and sugar and cream together until light and fluffy.
  2. Add half the flour and mix it in till everything has a consistent texture.
  3. Mix the other half of the flour with the baking soda and mix them in to the butter/sugar mixture.
  4. In another bowl mash the bananas.  Add one egg and stir, then add the other egg and stir.
  5. Mix the banana mixture with sugar/flour mixture.
  6. Coat the bottom of two 6'' x 3.75” x 2” aluminum foil loaf pans with spray cooking oil or butter.  Transfer mixture to the loaf pans.
  7. Put 3 cups of water in the pot, place tray on lower level, and put the loaf pans on the tray.  The water might slightly rise above the tray.  Don’t freak out.  It’ll be alright.
  8. Set to steam bake at 345°F for 14 minutes.  Open lid promptly after the 14 minutes are up.
  9. Set Speedi to sear/sauté for 6 minutes on Hi5, keeping the lid open.  This is to make sure it’s not too soggy on the bottom.
  10. Remove loaves.  Cool on a wire rack and serve.

 

 

Classic cut bacon — Ninja Speedi

2023-11-05:  first experiment.  I used the air fryer rack shown below.  Four pieces of bacon on bake/roast at 400° for seven minutes.  Came out pretty well perfect.  Mostly crisped up as it rested, but for crisper bacon I might try 8 minutes.

2023-11-06:  second experiment.  8 minutes made crispier bacon.  That's the way to go.

2023-11-16:  It seems that the crispness also is pretty dependent on the amount of fat in the bacon.  Fattier bacon may take a minute or two more.

 

 

Slow cook chicken & gravy — Ninja Speedi

Ingredients

  • 1-2 lb chicken breasts, trimmed (2-3 chicken breasts depending on size)
  • 1 can cream of chicken soup
  • 2 packets chicken gravy mix
  • 1 tsp garlic powder
  • 1/2 tsp poultry seasoning
  • 1/2 tsp black pepper
  • 2 cups water

Method

  1. Put chicken in the pot without the crisper tray.
  2. Mix all the rest of the ingredients in a large bowl.  (Okay, you could skip the bowl and just pour it all into the pot, but things mix so much more nicely if done separately.  On the other hand, this is a slow cook recipe, so it might not make a difference.)
  3. Cook using "Slow Cook" setting on LOW for 6-8 hours (or HIGH for 4-5 hours)
  4. Break chicken apart and serve with sides of your choice. 

This turned out fine.  I cooked on low for 6.5 hours.  Eight hours would have made the  chicken more tender.

On the side I had steamed broccoli and mashed potatoes.  Potatoes and gravy... my childhood favorite.

Crispy Sour Cream and Chive Chicken with Baby Yukon Potatoes — Ninja Speedi

  1. Chicken preparation:  In a medium bowl, stir together 1/2 cup sour cream, 1 tablespoon dried chives and 1 tablespoon onion powder. Season with salt and pepper. Add the chicken to coat on both sides. This can marinate up to 8 hours.
  2.  
  3. Add 2 cups of panko breaded crumbs and 1 tablespoon onion powder, salt and pepper to a plate . Mix together and press chicken cutlets in the crumbs to cover all of the chicken.
  4.  
  5. Slice 1.5 pounds of Yukon potatoes and add to the inner pot. Add 2 cups water, 1 tsp salt, 1/2 tsp each onion and garlic powder, stir.
  6.  
  7. Put the empty crisper tray on top.  Select Speedi Meals 375 20 mins.
  8.  
  9. After 12 mins, spray the crisper try with avocado oil and add the marinated breaded chicken cutlets to the crisper tray. Spray the tops with more avocado oil .
  10.  
  11. Flip the chicken when golden brown on top (about 5 to 6 mins) Spray with oil again. Check again a few mins later to make sure they are golden brown on both sides and 165 degrees F with an instant read thermometer . Remove to a plate.
  12.  
  13. Check potatoes for doneness . Remove to a bowl and toss with chives, butter and more salt and pepper to taste.

Notes:

2023-09-17:  I tried this for the first time.  Turned out really well on the first try.  My chicken breasts were thicker than average, so I added a bit of time towards the end after flipping the chicken, and the breasts still turned out  juicy and tasty.  The spice combo both on the chicken and the potatoes was really nice.  

2023-11-02:  Apprarently the original intent was to use chicken cutlets, breasts sliced in half horizontally, so that's why mine took longer than expected.

Coating for salmon:

  • 2 tablespoons Digon mustard
  • 1 tsp paparikia
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1/2 teaspon kosher salt
  • 1/4 tsp freshly ground black pepper
  • olive oil

Coat four 6-ounce salmon fillets, then bake at 400° for 10 minutes per the source.  My fillets were pretty thick so that was not sufficient.  I added 10 minutes on bake at 350°.  That was nearly perfect.  Next time I would try 4 minuts.

2023-08-16a:  In terms of taste I thought this was okay, but I liked the lemon pepper and salt version better.
