Cabbage with apples and raisins

This struck me as a decent idea, so here's what I did with what was on hand...

Ingredients

  • 1/4 of this enormous cabbage I had, chopped
  • 1 large granny smith apple, diced
  • 1 medium-sized red onion
  • 1 cup of raisins
  • salt, pepper, olive oil, hot water
  • a teaspoon of honey

Method

  1. Chop cabbage, dice apple, dice onion.
  2. Add some olive oil to a frying pan with high sides.  Saute the onions and apples with salt and a tiny bit of pepper till they are soft.  Heck, you could even let them carmelize.
  3. Add the cabbage and raisins, pour in a cup of hot water.  Braise till the cabbage is soft, adding more water if necessary.
  4. Finish uncovered after adding a drizzle of honey till most of the water is gone.

 Notes

2023-04-23:  This turned out pretty good.  It would have been a bit sweeter if I had added a second apple, but maybe that wouldn't be the best thing for a dinner.  I like using the red onion for its color.

Strawberries and Cream Baked Oatmeal Bars

Ingredients

  • 3 cups (240 g) old fashioned oats
  • 2 scoops (60 g) vanilla protein powder
  • 1 tsp (4 g) baking powder
  • 4 cups (450 g) strawberries frozen is fine
  • 2 tsp (8 g) sugar or sub 1/2 sugar alternative
  • 2 tbsp (42 g) maple syrup
  • 1 tbsp (14 g) butter
  • 10 tbsp (150 g) liquid egg whites or 2 eggs
  • 2 cups (480 g) skim milk
  • 4 oz (113 g) plain cream cheese i used whipped, regular is fine you'll just need to melt it down
  • 2 tbsp (20 g) sugar

Method

  1. Preheat your oven to 375°F.
  2. If your strawberries are whole, cut them into thin slices. If you would like a sweeter end product, sprinkle 2 tsp sugar or 1 tsp splenda the top of the strawberries and allow them to macerate.
  3. In a large bowl, mix together the oats, protein powder, and baking powder.
  4. Add in the egg whites, milk, syrup, 1 tbsp of melted butter, and most of the strawberries. Reserve a few to put on top.
  5. Spray a 13"x9" pan with oil and add the oat mixture.
  6. Mix together the cream cheese and sugar. You can microwave it for a bit to help it soften. Put a few spoonfuls of the cream cheese around your pan and swirl it around as best as you can.
  7. Bake for 35-40 minutes.
  8. Cool and cut into six bars.

Notes:  Yeah, this didn't suck. Lightly sweet, like a Bisquick coffee cake, not a cloyingly sweet cinnamon roll.

Roasted broccoli in air fryer

2023-04-19:  I cut up a small crown of broccoli into 1-2"pieces.  Sprayed the insert with oil.  Threw in the broccoli.  Sprayed it with oil.  Salt, pepper, granulated garlic.  Cooked for 9 minutes at 390 F, stirring every three minutes.  It turned out adequate:  still crispy, but also decently charred.  The broccoli was perhaps a touch crispier (i.e., not cooked to the center) than i would have liked.

Next time I think I'll toss the broccoli with more oil in a bowl, then add salt and pepper and garlic, then cook for 8 minutes at 390 F, stirring once at 4 minutes.

Sausage and broccoli pasta with cherry-pepper sauce

  • 1 lb hot italian sausage, ground
  • 8 oz of orecchiette (half of a 16-oz box)
  • broccoli crowns
  • 2 cloves of garlic
  • 1 16-oz jar of cherry peppers
  • some pasta water
  • 2.5 oz grated parmigiano reggiano

2023-04-10:  not bad for a bachelor dish, but in this form I don't like it enough to serve to guests.  Next time around I'll try two jars of cherry peppers if they are sweet, or, better yet, one jar of hot cherry peppers.  The immersion blender didn't work for the pepper emulsion; had to use the blender instead.  I should double or quadruple the amount of cheese as well.

2023-04-22:  I made it again tonight with hot cherry peppers instead of mild, spicy ground sausage, and a real block parmesan, not the pre-powdered stuff.  So good!  I would do the other version for guests who can't handle any spice, but this spicy version is definitely great.

Oven-roasted broccoli better

Ingredients:

  • 8 cups fresh broccoli florets 1.5 lbs (24 oz broccoli) cut into bite-sized pieces
  • ¼ cup olive oil
  • 1 tsp garlic powder
  • ½ tsp sea salt
  • ¼ tsp freshly ground black pepper
  • ¼ tsp red pepper flakes
  • ¼ tsp Hatch green chile powder (not in original recipe)
  • 1 roasted lemon

Method:

  • Preheat the oven to 400°F and line a baking sheet with parchment paper.
  • Place the broccoli florets and lemon halves on the baking sheet. Toss with olive oil, salt, and pepper, and spread evenly on the baking sheet.
  • Roast 15 to 22 minutes or until browned around the edges. Squeeze a little lemon juice onto the broccoli and sprinkle with red pepper flakes, if desired.

Poor man's Beef Stroganoff

Ingredients

  • 1-2 teaspoons olive oil
  • 6 ounces cooked bacon, diced.  That's six slices of my favority Hempler pepper bacon.
  • 8 ounces sliced mushrooms
  • ¼ teaspoon salt
  • 1 ½ pounds lean ground beef or ground turkey
  • 1 medium red or yellow onion, chopped
  • 2 cloves garlic, finely minced
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • ¼ cup flour
  • 2 tablespoons tomato paste
  • 1 cup low-sodium beef broth
  • 1 tablespoon Worcestershire Sauce
  • ½ teaspoon paprika
  • 1 cup sour cream, light or regular
  • ¼ cup chopped fresh parsley or 1 tablespoon dried

Method

  1. In a 12-inch nonstick skillet, heat 1-2 teaspoons olive oil and saute diced bacon over medium heat until crispy. Transfer bacon to a paper-towel lined plate and set aside, leaving any grease/oil in the pan. Add sliced mushrooms to the skillet and cook, stirring occasionally, for about one minute (if the pan is too dry, add a teaspoon of oil as needed). Add salt. Continue cooking until the mushrooms are softened and have given up most of their juices. Transfer them to the same plate as the bacon.
  2. In the same skillet, brown the ground beef or turkey with the onion, garlic, salt and pepper. Cook until the meat is no longer pink. Drain the grease.
  3. Stir in the flour and tomato paste to the meat mixture and mix to combine well. Cook over medium heat, stirring often, for 1 minute. Add the beef broth and bring the mixture to a simmer, whisking to combine all the ingredients. Simmer vigorously for 3-5 minutes until the mixture is slightly reduced and thickened. Stir in the Worcestershire sauce and paprika. Cook until flavors blend, about 5 minutes on medium heat. Add sautéed mushrooms and bacon back to the skillet. Remove the skillet from the heat and stir in the sour cream, mixing well to avoid lumps. Stir in the parsley.
  4. Serve over egg noodles, hot cooked rice, or potatoes.

2023-04-03:  This was really good, best version of poor man's stroganoff I've ever had.  Definitely a repeater.  I served it over a baked potato.

Oven-roasted broccoli

  • 8 cups fresh broccoli florets 1.5 lbs (24 oz broccoli) cut into bite-sized pieces

  • 1 tsp garlic powder
  • ½ tsp sea salt
  • ¼ tsp paprika
  • ¼ tsp freshly ground black pepper

Method

  1. Preheat oven to 450 degrees F.
  2. Grease a large baking sheet, set aside.
  3. In a small bowl mix together garlic powder, sea salt, paprika and black pepper. Set aside.
  4. Place broccoli pieces in a large bowl, drizzle with olive oil and stir until evenly coated.
  5. Sprinkle half of the spice mixture over the broccoli, stir and repeat with the second half and stir until evenly distributed.
  6. Spread seasoned broccoli evenly on the prepared baking sheet.
  7. Roast at 450 degrees for 14- 15 minutes, or until the broccoli is nicely roasted, stirring once halfway through. (Note: the size you cut the florets into will effect the baking time:  smaller florets = shorter bake time, larger florets = longer bake time; so keep that in mind!
  8. If necessary, broil the broccoli for 1-2 minutes at the end of roasting time to crisp it up (I find this is only necessary if using frozen broccoli).
  9. Remove from oven and serve immediately.

Dried mushroom gravy to be tried

Ingredients

  • 2 pieces garlic
  • 1/2 onion
  • 1 tbsp + splash avocado oil
  • pepper to taste
  • 1-2 small pre-boiled potatoes
  • 7g dried mushrooms
  • 1/2 cup red wine
  • 1/4 tsp cayenne pepper
  • 1/4 tsp cumin
  • 1 tsp smoked paprika
  • 1 tbsp soy sauce
  • 1/2 tbsp dark soy sauce
  • 1 cup veggie stock
  • 1/2lb shiitake mushrooms
  • pinch of salt

Directions

  1. Roughly chop the garlic and slice the onion
  2. Heat up a sauté pan to medium heat. Add 1 tbsp avocado oil followed by the onions, garlic, and pepper to taste. Sauté for about 5-6 min
  3. Add 1-2 small pre-boiled potatoes and dried mushrooms. Add the red wine, deglaze, and simmer for about 1min. Then, add the cayenne pepper, cumin, smoked paprika, soy sauce, dark soy sauce, and veggie stock. Stir and cook for 5-6min
  4. Transfer the mixture to a blender and blend on high until completely liquified. You can adjust the thickness of the gravy to your personal preference by adding a little more veggie stock or potato
  5. Slice the shiitake mushrooms
  6. Heat up a nonstick pan to medium heat. Dry sauté the mushrooms for 4-5min. Add a pinch of salt and fresh cracked pepper to taste
  7. Add a splash of avocado oil and sauté for another couple of minutes
  8. Heat up the gravy with the mushrooms in the sauté pan

Notes

2022-11-27:  Made it.  Didn't care for the taste, but I also have a funny taste in my mouth, so maybe I'm sort of physically off as well.  We'll see how it does on the reheat.

Ideas for wheat berries

Absolutely simplest

Boil the wheat berries with a cube of bouillon till they have the texture you want.  Eat 'em.

 

Really freakin' simple

This is the basic breakfast cereal version.  To hell with oatmeal.  First off, boil the wheat berries with nothing but water till they get to the texture you like.  Pour them in a sieve and run cold water over them to stop them from cooking.  Put 'em in the fridge.  Then in the morning put a cup of them in a bowl and:

  • throw in a tablespoon or two of butter.  
  • throw in a tablespoon or two of butter.  Pour on some honey.
  • throw in a tablespoon or two of butter.  Pour on some maple syrup.
  • throw in a tablespoon or two of butter.  Pour on some pomegranate molasses.
  • throw in a tablespoon or two of butter and some brown sugar.

Cover.  Heat in the microwave for a minute or so. Stir and eat.

What better way to start the morning than with café bombón? It's a 1:1 ratio of Eagle Brand to espresso.

2022-11-12: the 1:1 ratio is tasty, but probably sweeter than I need.

2022-11-13: today I tried a 3:1 ratio of espresso to Eagle Brand. Still good. Still quite sweet. Next time I should try to pour the Eagle Brand through the coffee instead of first.
