Strawberries and cream oatmeal bake — Ninja Speedi version

Oatmeal bakes are a great meal-prep so that you have less work to do for morning breakfast.  Here's my adaption of one such recipe.

Ingredients

  • 2 cups of water for steaming
  • 1.5 cups old fashioned oats
  • 1 scoop vanilla protein powder
  • 1/2 tsp baking powder
  • 1 cup of strawberries, frozen is fine
  • 1 tsp sugar
  • 1 tbsp maple syrup
  • 1 tbsp butter
  • 1 egg
  • 1 cup milk
  • 2 oz plain cream cheese. It's easier to use whipped cream cheese, but regular is fine; you'll just need to soften it.
  • 1 tbsp sugar

Method

  1. If your strawberries are whole, cut them into thin slices. If you would like a sweeter end-product, sprinkle 2 tsp sugar on top of the strawberries and allow them to macerate.
  2. In a large bowl, mix together the oats, protein powder, and baking powder.
  3. Add in the egg, milk, syrup, melted butter, and most of the strawberries. Reserve a few to put on top.
  4. Spray a 7"x7" pan with oil and add the oat mixture.
  5. Mix together the cream cheese and sugar. You can microwave it for a bit to help it soften. Put a few spoonfuls of the cream cheese here and there on the surface.  Intersperse the reserved berries with the cream cheese.
  6. Set the Ninja Speedi for 9 minutes at 315°F on the "steam and bake" setting. It will steam for about 20 minutes before baking. Press start.
