Royal marble cheesecake
Ingredients
- 6 oz chocolate chips
- 1 cup flour
- 2 tbsp sugar
- 1 cup sugar
- 1/4 tsp salt
- 1/4 butter
- 3 eight-ounce packages of cream cheese
- 2 tsp vanilla
- 6 eggs
- 1 cup sour cream
Method
- Melt chocolate over a double boiler.
- Combine 3/4 cups flour, 2 tbsp sugar and 1/4 tsp salt. Cut in butter. Stir in 2 tbsp chocolate. Press into bottom of pan (9-inch circular). Bake at 400° for 10 minutes. This is the crust.
- Take softened cream cheese with 1 cup sugar. Blend in 1/4 cup flour and vanilla. Add eggs one at a time, beating well after each one. Blend in sour cream.
- Combine rest of chocolate with 1 3/4 cup of cheese mixture.
- Pour 1/2 of plain mixture over crust. Top with spoonfuls of 1/2 of chocolate mixture. Cover with remaining plain mixture, then with remaining chocolate mixture. Cut through batter with spatula.
- Put in 400° oven, immediately reset to 300°. Bake 1 hour. Turn off oven. Let stay 1 hour. Loosen cake from edge of pan. Cool for 2-3 hours away from draft. Chill 8 hours before serving.
