Quinoa with cranberries, leeks, and almonds

Ingredients
- 3 tablespoons (3/8 stick) butter
- 1 1/2 cups chopped leeks (white and pale green parts only)
- 2 1/2 cups canned vegetarian broth
- 1 cup uncooked quinoa
- 1/3 cup dried cranberries
- 1/3 cup sliced almonds, toasted
Directions
- Melt butter in heavy large saucepan over medium-high heat.
- Add chopped leeks and sauté until very tender, about 12 minutes.
- Add broth and bring to boil. Stir in quinoa and boil 10 minutes.
- Add dried cranberries. Remove from heat, cover and let stand 20 minutes. Fluff with fork. Mix in sliced almonds. Season to taste with salt and pepper.
