Pot roast

Last night I made a pot roast, and for the first time I successfully used my new Dutch oven, following the instructions from Cook's Illustrated of this last year. (BTW, I just paid for a three year subscription.) That went fine. I made only one substitution, using agave nectar in place of sugar.

Later I realized something that really I was jonesing for an old carveable type of roast like Mom used to make, not a fall apart pot roast. I realized that I was really trying to recreate something my mother would occasionally make. And really that's not a pot roast. It's really a dry roast, along with Yorkshire Pudding, which is an old family favorite.
