Nokedli/Spätzle

This is about the most minimalistic noodle recipe you can imagine. Here is my version. It makes 2 servings.

Ingredients

  • 2 eggs
  • 1/4 cup water
  • 1 cup all-purpose flour
  • 1 large pot filled with heavily salted boiling water

Directions

  1. Place large pot filled with heavily salted water on the stove and bring to boil.
  2. Combine eggs and water in a bowl and mix with a fork. Pour flour in a larger bowl. Add the egg/water combo. Mix it all together roughly with a wooden spoon. Don't try to get a perfect consistency, just incorporate all the flour.
  3. The consistency of the dough is significant. It should pull away from the spoon fairly easily. Use this video to judge the consistency. Add more flour or water to get the consistency right.
  4. Use a spätzle maker. The noodles are done when they float to the top. Remove from water with large slotted spoon, and place in colander. Rinse with cold water. You may want to make the dumplings in 2 or 3 batches so they dont overcook.
  5. You can heat the dumplings in a frying pan with melted butter. Do not let the dumplings get too brown or crisp.

Serve with chicken paprikas. The dumplings are also nice added to a stew.

Noreen's video adds two ideas:

  • Use bread flour, not all-purpose flour
  • Once you have rinsed the nokedli, pour a bit of sunflower oil on them and toss them so they don't stick together too much.

This was my first attempt. When the noodles went into the water, the water was always boiling. The rose to the top almost immediately, which bugged me because they were certainly not done yet. I occasionally mixed them and pushed them down. Let them continue stewing for what seemed liked a good time. Damned if it didn't turn out right the first time.
