Curried broccoli on onion-serrano rice

I'm supposed to take a vegetable for Thanksgiving. I decided to take green curried broccoli, which I make regularly, but then I thought it would be good to take it on rice. But rice is boring. How to spice it up? Serranos, of course! But spice without some savory flavor is mediocre. How to make it savory? Onions! So here is what I did:

  1. First I boiled up 2 cups of rice in 4 cups of chicken broth.
  2. While the rice was boiling, I boiled 4 pounds of broccoli in two cans of coconut milk with two tablespoons of green curry paste until almost tender. This I set aside.
  3. I chopped up three pounds of yellow onions, sauteed them in olive oil, along with about six cloves of crushed garlic and eight chopped serranos. When the onions were mostly fried down, I added about a quarter teaspoon of ground pepper and about teaspoon of ground cumin.
  4. I mixed the onion mixture with the rice. Put it in a dutch oven. Poured the brocolli mix on top.

Tomorrow I'll reheat it in the oven for a while and take it to Judy's.
