Chile puree

I am now quite fond of chile puree, which I make from the recipe in "Special Mexican Dishes." Made from dried chiles, the puree is very low in calories, thus its great for flavoring soups and stews. It's not too complex to throw together, although it takes a bit of time. Once you've done it once or twice, it's something you can do simultaneously with other things.
