Chicken with green chiles (2nd attempt)

Ingredients

  • Boneless skinless frozen chicken breasts, 3 lbs. (one frozen plastic bag at Fry's)
  • Green chiles, 6 oz, (1.5 cans)
  • 1 med onion, chopped

Procedure

  1. Put onions and then chicken in crockpot. Mix these spices

    • 1 tbsp mixed Italian spices
    • 4 tsp garlic powder
    • 1 tsp ground cumin
    • ½ tsp red pepper

    with 1 cup of water. Pour over chicken. Cook on low for 10 hours on the porch.

  2. Remove chicken from crockpot. Shred.
  3. Put chiken in large pan on stove. Add ½ onion, chopped. Add green chiles. Simmer a while.

This came out okay. Next time I'll add ½ tsp of salt. Next time I'll use 8 or 12 oz of green chile.

There's still a smoothness missing to it that may be due to not using corn starch to thicken it. There's a fruitiness missing, which may be due to too few green chilis. I should check out food city for canned green chile prices.
