Cabbage with apples and raisins

This struck me as a decent idea, so here's what I did with what was on hand...

Ingredients

  • 1/4 of this enormous cabbage I had, chopped
  • 1 large granny smith apple, diced
  • 1 medium-sized red onion
  • 1 cup of raisins
  • salt, pepper, olive oil, hot water
  • a teaspoon of honey

Method

  1. Chop cabbage, dice apple, dice onion.
  2. Add some olive oil to a frying pan with high sides.  Saute the onions and apples with salt and a tiny bit of pepper till they are soft.  Heck, you could even let them carmelize.
  3. Add the cabbage and raisins, pour in a cup of hot water.  Braise till the cabbage is soft, adding more water if necessary.
  4. Finish uncovered after adding a drizzle of honey till most of the water is gone.

 Notes

2023-04-23:  This turned out pretty good.  It would have been a bit sweeter if I had added a second apple, but maybe that wouldn't be the best thing for a dinner.  I like using the red onion for its color.
