Cabbage with apples and raisins
This struck me as a decent idea, so here's what I did with what was on hand...
Ingredients
- 1/4 of this enormous cabbage I had, chopped
- 1 large granny smith apple, diced
- 1 medium-sized red onion
- 1 cup of raisins
- salt, pepper, olive oil, hot water
- a teaspoon of honey
Method
- Chop cabbage, dice apple, dice onion.
- Add some olive oil to a frying pan with high sides. Saute the onions and apples with salt and a tiny bit of pepper till they are soft. Heck, you could even let them carmelize.
- Add the cabbage and raisins, pour in a cup of hot water. Braise till the cabbage is soft, adding more water if necessary.
- Finish uncovered after adding a drizzle of honey till most of the water is gone.
Notes
2023-04-23: This turned out pretty good. It would have been a bit sweeter if I had added a second apple, but maybe that wouldn't be the best thing for a dinner. I like using the red onion for its color.
