  • Royal marble cheesecake

    Ingredients

    • 6 oz chocolate chips
    • 1 cup flour
    • 2 tbsp sugar
    • 1 cup sugar
    • 1/4 tsp salt
    • 1/4 butter
    • 3 eight-ounce packages of cream cheese
    • 2 tsp vanilla
    • 6 eggs
    • 1 cup sour cream

    Method

    1. Melt chocolate over a double boiler.
    2. Combine 3/4 cups flour, 2 tbsp sugar and 1/4 tsp salt. Cut in butter. Stir in 2 tbsp chocolate. Press into bottom of pan (9-inch circular). Bake at 400° for 10 minutes. This is the crust.
    3. Take softened cream cheese with 1 cup sugar. Blend in 1/4 cup flour and vanilla. Add eggs one at a time, beating well after each one. Blend in sour cream.
    4. Combine rest of chocolate with 1 3/4 cup of cheese mixture.
    5. Pour 1/2 of plain mixture over crust. Top with spoonfuls of 1/2 of chocolate mixture. Cover with remaining plain mixture, then with remaining chocolate mixture. Cut through batter with spatula.
    6. Put in 400° oven, immediately reset to 300°. Bake 1 hour. Turn off oven. Let stay 1 hour. Loosen cake from edge of pan. Cool for 2-3 hours away from draft. Chill 8 hours before serving.
  • Tri-tip roast

    I picked up a tri-tip roast from Costco. It weighed 3.13 pounds. The directions said to cook it at 425° until it gets to 145° in the thickest part. Alas, it didn’t give a time reference. I took a look at my meat cookbook. It recommended 450° for 20 minutes and then some other behavior I ignored.

    So I guesstimated 30 minutes. Checked. Not close. 40 minutes? Closer. I took about 45 minutes before it got to about 135°, which is when I removed it. Then I let it rest for 15 minutes to let it finish cooking and redistribute the juices.

    I’ll have to reconsider the time. I haven’t eaten enough of the roast yet to figure out whether the middle was too raw, but I think next time 40 minutes for a similar size roast would be good enough.

    2014-11-21: I’ve been eating the roast for several days now. It actually turned out really, really good. The middle has a bit of pink left. Very tasty. It rocks. I bet 40 minutes without interruption would work great for this weight.

    Total: 1086

    That made 4 cups of chile by volume. A one cup serving will have 272 calories.
